The oxheart tomato, so named because its shape resembles that of an ox’s heart, is so beloved by the Portuguese that almost every village has developed its own selection. A little redder, a little bigger, a little smaller, a little fleshier, juicier, rounder or more heart-shaped, the Portuguese love this variety of tomato so much that their passion forced supermarkets to make them available at the perfect stage of ripening: green tinted with red, not uniform and difficult to store, almost ugly.
